Shepard's Pie The Great British Classic
500g Lamb Mince
500g Potatoes
3 egg yolks
1 onion grated
2 carrots grated 1 cup of peas
red wine a cup
Tomato Paste
garlic Minced
thyme
rosemary
500ml chicken stock
parmesan cheese
tablespoon butter
little drop of milk
a good few dashes of Worcestershire sauce
salt
black pepper
preheat oven to 200 degrees c
Get a pot of water boiling add a good dash of salt then add your potatoes cut into quarters to pot (Boil Until Soft)
starting by frying lamb mince in the frying pan season with salt and pepper to help remove water
once meat is browned add tomato paste, garlic, onion and carrots cook until onions and carrots start to go soft
add in your wine, Worcestershire sauce and chicken stock along with rosemary sprigs, thyme flowers and peas cook for out for 5-10 mins then remove rosemary sprigs
Transfer everything To Your Glass Dish
drain potatoes
Mash potatoes with butter and milk then add parmesan cheese then add 3 egg yolks and mix
then spread the potato mixture evenly on top of the meat layer
use a fork to create lines across the topping then grate parmesan cheese on top
cook in the oven for 30 minutes get the top nice and crispy
once taken out of the oven leave for 5 minutes for it to set then portion it out and serve
