Apple Pie Bread
Bread:
1 ½ cups of all purpose flour
½ cup granulated sugar
½ cup brown sugar
1 ½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg (optional)
(cinnamon and nutmeg can be replaced with 2 tsp apple pie seasoning)
2 large eggs
½ cup vegetable oil (or melted butter)
⅓ cup milk (or buttermilk)
1 tsp vanilla extract
1 ½ cups peeled and finely chopped apples (about 2 medium apples)
Cinnamon sugar swirl (optional but recommended):
¼ cup brown sugar 1sp cinnamon or more apple pie seasoning
Instructions:
Preheat the oven to 350 degrees (175c). Grease a 9x5 inch loaf pan or line with parchment paper
In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon and nutmeg (or apple pie seasoning).
In another bowl, whisk eggs, oil, milk, and vanilla until well combined
Stir wet ingredients into dry ingredients until combined (do not overmix)
Gently fold in chopped apples
If using the cinnamon sugar swirl:
Pour half of the batter into the pan
Sprinkle half of the cinnamon sugar mix
Add remaining batter and sprinkle the rest of the cinnamon sugar on top.
Swirl slightly with a knife for a marbled effect
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean
Cool in pan for 10-15 minutes, then remove to a wire rack to cool completely
