1 Lb. Ground Beef/Italian Sausage

1 Onion, Diced

4 Garlic Cloves, Minced

2 Tbsp. Tomato Paste

24 oz. Marinara Sauce

4 Cups Chicken Broth

1/2 Lb. Lasagna noodles, broken

1/2 Cup Heavy Cream

1 cup Shredded Mozzarella

1/2 Cup Grated Parmesan

1 Cup Ricotta (For Topping)

Fresh Basil/Parsley (Optional)


INSTRUCTIONS:

1. Brown meat: Cook in olive oil until browned. Add onion and garlic; sauté until soft


2. Build Flavor: Stir in tomato paste and cook 2 minutes. Add in marinara and broth; bring to boil


3. Cook Noodles: Add broken lasagna noodles. Simmer 12-20 minutes until al dente.


4. Finish: Stir in cream and cheeses. Top with ricotta cheese.


Additional Tips: For a thicker soup reduce broth to 3 cups or simmer longer.


You can swap out proteins to use ground Turkey or plant-based meat or even just double veggies such as mushrooms or spinach!
