Ingredients for Meatballs:


1lb lean ground beef 2 cloves of garlic, minced ½ in ginger, grated (or sub pre done paste) 1 egg ¼ cup breadcrumbs 2 tbls soy sauce 1 tbls sesame oil 1 tbls gochujang (Korean chili paste) 1 tbls brown sugar 1 tsp rice vinegar (or apple cider vinegar) 1 tsp cornstarch (optional, for binding) Salt and pepper to taste Toasted sesame seeds for garnish along with chopped scallions (both are optional)


Spicy Mayo Sauce:


½ cup mayonnaise (for more unique flavor I used Kewpie mayo from local asian market) 1 tbls gochujang 1 tsp lime juice ½ tsp honey (or can use actual maple syrup if you don’t have honey)

Directions:

Preheat the oven to 400F or 200C. Line a baking sheet with parchment paper. In a mixing bowl, combine ground beef, garlic, ginger, green onions, egg, breadcrumbs, soy sauce, sesame oil, gochujang, brown sugar, rice vinegar, and season with salt and pepper. Mix until well combined and form into 1 inch meatballs Place the meatballs on the prepared baking sheet and bake for 18-20 mins, or until fully cooked and browned Meanwhile, in a small bowl, whisk together all the spicy mayo sauce ingredients until smooth and creamy Serve the meatballs warm, drizzled with the spicy mayo sauce or as a dip on the side. Garnish with sesame seeds and scallions

Optional: served with stir fried corn and some jasmine rice as a bowl
