Ingredients for Meatballs:&lt;br /&gt;

¼ cup breadcrumbs&lt;br /&gt;
2 tbls soy sauce&lt;br /&gt;
1 tbls sesame oil&lt;br /&gt;
1 tbls gochujang (Korean chili paste)&lt;br /&gt;
1 tbls brown sugar&lt;br /&gt;
1 tsp rice vinegar (or apple cider vinegar)&lt;br /&gt;
1 tsp cornstarch (optional, for binding)&lt;br /&gt;
Salt and pepper to taste&lt;br /&gt;
Toasted sesame seeds for garnish along with chopped scallions (both are optional)&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Spicy Mayo Sauce:&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
½ cup mayonnaise (for more unique flavor I used Kewpie mayo from local asian market)&lt;br /&gt;
1 tbls gochujang&lt;br /&gt;
1 tsp lime juice &lt;br /&gt;
½ tsp honey (or can use actual maple syrup if you don’t have honey)&lt;br /&gt;
&lt;br /&gt;
Directions:&lt;br /&gt;
&lt;br /&gt;
Preheat the oven to 400F or 200C.  Line a baking sheet with parchment paper.&lt;br /&gt;
In a mixing bowl, combine ground beef, garlic, ginger, green onions, egg, breadcrumbs, soy sauce, sesame oil, gochujang, brown sugar, rice vinegar, and season with salt and pepper.&lt;br /&gt;
Mix until well combined and form into 1 inch meatballs&lt;br /&gt;
Place the meatballs on the prepared baking sheet and bake for 18-20 mins, or until fully cooked and browned&lt;br /&gt;
Meanwhile, in a small bowl, whisk together all the spicy mayo sauce ingredients until smooth and creamy&lt;br /&gt;
Serve the meatballs warm, drizzled with the spicy mayo sauce or as a dip on the side.  Garnish with sesame seeds and scallions &lt;br /&gt;

Optional: served with stir fried corn and some jasmine rice as a bowl&lt;br /&gt;
